Asparagus loses its quality quickly after harvest. Storing it upright in a small amount of water helps maintain its freshness and crispness for a few days.

How to Store upright in water
- Trim about ¼ of an inch off the ends of the stalks.
- Wash the asparagus several times in cool water and pat dry.
- Stand the asparagus upright in a container with 2 inches of cold water.
- Cover the tops loosely with a plastic bag and store in the refrigerator.
Why it works
Asparagus stalks continue to draw up moisture after being cut. Providing a water source at the base prevents the spears from drying out and becoming woody, while the plastic bag helps retain humidity around the delicate tips.
